LAL Creator Elena Mascherino had an idea to design a space where people and community were the primary focus. Her plan took the form of the vegan deli and sandwich shop that now stands on a quiet corner in downtown West Chester Pennsylvania.
Elena eventually teamed up with fellow vegan entrepreneur Abraham Koffenberger to bring the restaurant offerings to a new, premium, and delicious level. Abe developed and continues to produce all of LAL sandwich “meats” right on the premises of this local gem. His experience and expertise in the culinary arts, and overall infectious positive energy have all played a major role in LAL’s success.
In 2020, LAL welcomed food service veteran Fran Wiradilaga to the management team during the pandemic. Fran played an important part in keeping the kitchen stocked and running smoothly during those uncertain times. He is a master of multitasking and is always on top of what’s happening in the chaotic kitchen at LAL.
Walk into LAL anytime to the swirling aromas of freshly baked cookies, house-made soups, award-winning roasts, and, of course, sandwiches! LAL has been a force to be reckoned with in the Philadelphia area vegan restaurant scene, winning awards for their flagship sandwich, “My Cousin Vinny” and Abe’s coveted holiday “turkey” roast. The team is currently cooking up plans to grow their business into the future. Stay tuned for what’s next!
